Budget-friendly meals: Ann’s chicken, sweet potato broccoli sheetpan

Ann’s chicken, sweet potato, broccoli sheetpan

Ingredients

  • 4 bone-in, skin-on chicken thighs, or 6 legs (or a combination)
  • 2 medium sweet potatoes, cut into 1-inch chunks
  • 2 tablespoons canola oil, or grapeseed oil, divided
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1/2 teaspoon cayenne pepper
  • 1 large head of broccoli
  • Kosher salt, to taste
  • Pepper, to taste

Recipe

  1. Preheat and Prep: Preheat your oven to 425°F (220°C). For easy cleanup, line a large rimmed baking sheet with aluminum foil or parchment paper.
  2. Season the ingredients: in a large bowl, whisk together the olive oil, soy sauce, honey, lemon juice, salt, and pepper. Toss the sweet potato cubes and chicken thighs in the mixture until well coated.
  3. Initial roast: arrange the chicken (skin-side down) and the sweet potatoes in a single layer on the sheet pan. Place it in the oven and roast for about 20 minutes.
  4. Add the broccoli: while the pan is baking, toss the broccoli florets in the remaining marinade. Remove the sheet pan from the oven, flip the chicken, and scatter the broccoli around the chicken and potatoes.
  5. Finish baking: return the pan to the oven and roast for an additional 15 minutes, or until the sweet potatoes are tender and the chicken reaches an internal temperature of 165°F.

Money-saving tip: swap in other vegetables if cheaper or on sale, like green beans or frozen broccoli.
