This one comes from our Senior Director of Brand and Communications, Rebekah Collinsworth.

Rebekah’s shredded watermelon rind coleslaw

Budget breakdown

Total cost: $5-10

Serves: 10

Total time: 10 minutes

Ingredients

  • ½ whole medium-sized watermelon
  • 3 tablespoons vegetable oil
  • ½ cup rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt

Recipe

  1. Cut watermelon from the rind and cut the flesh into 1/2-inch chunks. Place 1-1/2 cups in a bowl and set aside remaining watermelon.
  2. Shred watermelon rind; place in a large bowl (you should end up with about 6 cups).
  3. In a small bowl, whisk oil, vinegar, sugar, and salt. Pour oil mixture over rind and toss until evenly coated. Stir in watermelon chunks (from the bowl); let chill at least 1 hour before serving.

Money-saving tip: you can use the watermelon flesh for other recipes! It is a truly no-waste treat.

We asked Rebekah: What’s one piece of advice you would share with someone who wants to eat well on a budget?

Rebekah: Look for things that have no waste and that you can use for multiple purposes. I love this recipe because I am using something that is in season (cheaper), and none of it goes to waste.
